LOW CARB SALMON MARINADE

The secret behind this baked salmon is the low carb salmon marinade.  The marinade in this recipe doesn't use a sweetener (like our honey glazed salmon), so it's perfect for low carb or keto diets.

Most salmon recipes require marinating the fish for a time before you cook it, But our easy baked salmon recipe is perfect if you're short on time because you can just cook the fish in the marinade.  I really love that it requires only 5 minutes of prep time. That means you can easily throw together dinner while you keep juggling everything else.

The marinade recipe uses ground spices but, if used raw, these flavors can be a little overwhelming with the fish.  The easiest way to avoid this is to purchase roasted ground cinnamon and and roasted ground ginger. If you can't find the roasted variety at your store, simply toast the ground spices in a skillet over medium heat until fragrant.  Then, you can mix them with the other ingredients.

While it might seem like an unnecessary extra step, you'll appreciate the extra subtler flavor from the toasted spices when you enjoy your soy salmon.

HOW DO YOU MAKE SALMON MOIST?

When I taught cooking classes regularly, several of my students were shocked by the texture of the salmon we made. I was immediately bombarded with questions. "How do you make salmon moist? Is it the marinade? The cooking method?"

After eating my share of dry overcooked salmon, I finally figured out that the secret to moist and perfectly cooked salmon is the cooking time.

TEMPERATURE FOR COOKED SALMON

In search of flaky fish, most people end up overcooking their salmon, beyond the USDA recommended cooking temperature of 145°F.  Once you get the fish above that temperature, it starts to lose its natural moisture and dry out.

I actually prefer my salmon cooked medium or medium rare. The center is still a bit orange, and the salmon is tender, flaking in big chunks rather than dry bits. For this silky texture, remove the salmon around 130-135°F. Put the cover back on your dish and the center of the fish will continue coming up to temperature a bit after pulling it from the oven.

KEEP THE SALMON SKIN ON

Another mistake people often make with baked salmon is removing the salmon's skin. The only time you should cook salmon without skin is when you're poaching it.

When baking salmon, the tough fatty skin helps protect the salmon from overcooking by providing a barrier between the fish and the baking sheet.

In this easy baked salmon recipe, you are technically poaching the salmon in the marinade. But it's not a huge amount of liquid so I still keep the skin on.

COVER YOUR BAKED SALMON

Still worried about dried out fish? Try covering  your salmon while baking. Covering the fish while it bakes locks in the moisture and makes a perfect finish much more likely! This technique is especially useful for a large salmon fillet with varying thickness. Just use a baking dish with a lid, or cover the dish with foil before putting in the oven.

Soy Sauce Baked Salmon Recipe
  • Preheat the oven to 325° F.
  • Combine the soy sauce, lemon juice, pepper, and toasted spices in a small bowl.
  • Place a 12 oz  salmon fillet (or two 6oz fillets)  in a shallow baking dish and completely cover with the sauce.
  • Cover and bake for 15 minutes until the salmon reaches 130-135° F or pulls apart easily with a fork.
  • Serve with some roasted asparagus and a fresh side salad for a satisfying and healthy meal any day of the week.

It's as easy as that!  Whether you make it on your own or you recruit the kids to help you, easy baked salmon is one meal you don't have to stress about.

Instructions

  1. Preheat oven to 325 degrees F.
  2. In a small bowl, whisk together the marinade ingredients.
  3. Place salmon in a shallow baking dish and pour marinade over the fish.
  4. Cover and cook 15-20 minutes, until the center of the salmon is around 130 degrees F.
  5. Remove from oven and let sit, covered, for 5 minutes.
  6. Garnish with lemon slices and fresh dill.
